Day 2: Gingerbread Season Begins

Oh, tis the season of gingerbread.  I just love that smell.  And so I begin Day Two of my holiday baking with these gingerbread cheesecake bites.  I saw them from The Pinterestese, of course, so I decided to try my hand at them.  From the one I tasted, they're delicious.








I made them messier than they should be...but hey....they're edible.  And that's important!






I changed up the recipe a tad.  Instead of using refrigerated dough, I used a pouch of Betty Crocker gingerbread and refrigerated the mixed dough for a couple of hours.  It still appeared to work.







Now the hard part is figuring out what to bake for tomorrow....
